Coffee Cookie Cups

These delicious coffee infused cookie cups will really get you buzzing. This is essentially a cookie dough but cooked in oven proof dishes for that restaurant dessert experience.

They are super easy to make, and you can just use the cookie dough to make conventional cookies but here we have baked them in cute little individual cups.

The addition of ground coffee gives you that amazing coffee flavour and of course aroma. The chocolates I have used make these so good, if you don’t have the same chocolates to hand that I used then no stress just switch them for any chocolate you can get your hands on.

If you don’t have oven proof dishes then just use this dough to make cookies by portioning the dough balls into 70g-85g and baking on an oven tray. The dough can also be frozen uncooked in balls or dishes for when you need a sugar hit fast.

I serve mine with ice cream as soon as they come out of the oven.

Coffee Cookies Cups

Ingredients
100 g Butter, unsalted, soft
90 g Sugar, soft light brown
80 g Sugar, caster
1tsp Salt
½ tsp Bicarbonate soda
1 Egg, whole
150 g Flour, plain
25 g Cocoa powder
25 g Coffee, ground
65 g Chocolate, dark buttons or chopped
100 g Chocolate, Callebaut ‘Gold’, buttons
Method
  1. Cream the butter with the sugars, salt, and bicarb together slowly.
  2. Mix until soft light and pale.
  3. Add the egg and beat in well.
  4. Add the flour, cocoa powder, coffee and chocolates and mix well by hand.
  5. Take two tablespoons of dough and push into an oven proof dish. Repeat with more dishes and roll any left-over dough into 70 g – 85 g balls and freeze for later.
  6. Bake the cups in an oven preheated to 180C for 18-20 minutes.
  7. Remove from the oven and serve with ice cream and a dusting of cocoa powder.
